Pani - Poori



Pani

Ingredients:

Water 1-2 cups
Tamarind paste ½ -1 tsp
Black Salt ½ tsp
Coriander powder ½ tsp
Cumin powder ½ tsp
Pepper powder ¼ tsp
Chilli powder ½ tsp
Sugar ½ tsp
Salt
Coriander leaf + Green chillies + Mint leaves 1-2 tsp

Method:

1. Take water in a bowl add tamarind paste, black salt, coriander powder, chilli powder, cumin powder, pepper powder, sugar and salt. Mix well.

2. Now take coriander leaf, green chillies and mint leaves in mortar and pestle. Crush it and add in to the water. Mix well.

3. Pani (spicy water) for the pani-poori is ready to serve.

Poori

Ingredients:

Semolina/ Sooji 1 cup
Maida/All purpose flour 2 tsp
Oil
Water
Salt

Method:

1. Mix semolina and salt. Add little water just to wet the semolina (don’t add more water). Mix well.

2. Now add maida (for binding) and mix well. Add little water and knead well. Add 3-4 tsp of oil and knead it for about 10 minutes. Cover it and rest it for 20 minutes.

3. Divide the dough into round balls.

4. Take 2 polythene sheets and apply oil on one side of each and keep the balls in between the sheets, press it and roll it with rolling pin to make a thin round disc. Make small discs of 2 inch diameter by pressing any bottle lid of 2 inch diameter. (OR you can make 2 inch round discs directly but its time consuming)

5. Now heat the oil and fry the pooris in medium heat. Press lightly on the poori (which helps to puff) with frying spoon. When it puffs turn it and fry till golden brown. 5-6 pooris can be added at a time.

6. Take out the pooris and place it on paper towel.

For Stuffing:

1. Chopped onions 1 cup
2. Cooked Chickpea/Kabuli chana 1 cup
3. Chopped and cooked potato 1 cup
4. Chopped Green chillies ¼ cup
5. Mixture (any) 1 cup
6. Chopped coriander leaves ½ cup
7. Chilli sauce 1 cup
8. Yogurt ½ cup (optional)
9. Chopped tomato ½ cup (optional)

Make small hole on each puri and stuff with above ingredients, then fill the pani and enjoy
