Menthe Soppu Chitranna
Ingredients:
Rice (Sona masoori or Basmati) 1 cup
Menthe soppu/Fenugreek leaves 1 bunch (about 3 cups)
Onion 1
Curry leaves 1 strand
Green Chillies 4
Groundnut ¼ cup
Coriander powder 1-2 tsp
Chilli powder 1 tsp
Turmeric powder ¼ tsp
Cumin powder ¼ tsp
Lemon ½
Salt
Oil 4-5 tsp
Method:
1. Pressure cook the rice.
2. Wash and chop the Fenugreek leaves. Chop onions and green chillies.
Keep aside.
3. Heat oil in a pan, add ground nut fry them, add green chillies
and curry leaves fry them. Add chopped onions and fry till transparent.
4. Now add chopped fenugreek leaves and little salt. Cook for few minutes.
5. Add Chilli powder, Coriander powder, turmeric powder, cumin powder
mix well. Cook for another 5-10 minutes in low heat.
6. Finally add lemon juice and little salt. Switch off the stove.
Add this to cooked rice and mix well.
Menthe soppu chitranna is ready to serve.
