Malabar Spinach/Basale Soppu Palya



Ingredients:

Malabar spinach(Basale soppu) chopped 4 cups
Onion chopped 1 cup
Tomato chopped 1 cup
Grated coconut ¼ cup
Gralic cloves chopped 3-4
Green chillies 4-5
Cumin ¼ tsp
Mustard
Oil
Salt

Method:

1. Wash and cut the leaves and tender stems of Malabar
spinach into small pieces. Keep aside.

2. Heat oil in a pan add mustard and then add cumin, green
chillies and garlic one by one and fry them. Add onions and fry.

3. Add tomatoes and little salt, cover the lid. Let it cook
for few minutes in low heat.

4. Add chopped Malabar spinach mix well and cover the lid.
Let it cook for 10 minutes in medium heat.

5. Add grated coconut mix well and again cook for 5 minutes
in medium heat.

6. This recipe goes well with rice, dosa, chapati, rotti etc.
