Egg Tomato Masala
Ingredients:
Eggs 5-6
Chopped onion 1
Chopped tomato 1-2
Green chillies 4
Chopped coriander leaves 1 cup
Garlic paste 1 tsp
Ginger paste 1 tsp
Chilli powder 1-2 tsp
Coriander powder 1 tsp
Turmeric powder ¼ tsp
Cumin powder ¼ tsp
Cloves 2-3
Cinnamon 1 stick
Pepper ¼ tsp
Salt
Oil
Water
Method:
1. Boil the eggs in water for 20 minutes. Remove the shell and cut it into 2 pieces. Keep aside.
2. Heat oil in a pan. Add cloves, cinnamon, pepper, green chillies, onion, ginger and garlic paste one by one. Fry till golden brown. Add tomatoes and salt, cover the lid and cook for few minutes in low flame.
3. Add chilli powder, coriander powder, turmeric powder and cumin powder. Mix well and add enough water. Cook for 5 minutes in medium to high flame.
4. Add eggs and mix well. Again cover the lid cook for few more minutes. Finally add coriander leaves and switch off the heat.
