Mixed Pickle/Kocchuppinakayi


Ingredients:

1 Raw mango
2 Lemons
Ginger small piece
Mango ginger small piece
Chilli powder 2-3 tsp
Green chillies 4-5
Garlic 5 cloves
Curry leaf 2 strands
Mustard
Asafoetida/Hing
Salt
Oil
(Any vegetables and citrus family fruits can be added)

Method:

1. Wash raw mango, lemons, ginger, green chillies and vegetables. DRY it completely. Make sure that water should not be there because it spoils the pickle.

2. Cut raw mango, lemons, ginger, mango ginger, green chillies into small pieces. Add fried salt into it (to avoid spoiling). Then add chilli powder. Mix well and keep aside.

3. Cut curry leaves and garlic into small pieces.

4. Heat little oil in a frying pan and add mustard, asafoetida, garlic and curry leaves. Allow it to cool.

5. Add step 4 into step 2. Mix well and store it in an airtight jar in refrigerator.
