Chicken Fry



Ingredients:

Chicken ½ kg
Onion 1
Minced Ginger 2-3 tsp (fresh)
Minced Garlic 2-3 tsp (fresh)
Red chilli powder 2-3 tsp
Coriander powder 2-3 tsp
Turmeric powder ¼ tsp
Green chillies 4 (optional)
2 cloves and a small piece of cinnamon (optional)
Tomato 1
Lemon 1/2
Salt
Oil

Method:


1. Wash and cut the chicken into small pieces. Marinate with salt, turmeric and lemon juice.

2. Chop onion, tomato and green chillies, set aside.

3. Heat a pan and dry roast red chilli powder and coriander powder till it turns blackish color on very LOW FLAME.

4. Make powder out of cloves and cinnamon.(optional)

5. Heat oil in a pan and add green chillies, saute. Add minced ginger and garlic, fry them for few minute. Add onions and fry till transparent.

6. Now add marinated chicken, roasted red chilli powder, coriander powder and cinnamon-clove powder. Mix well, cover it and cook for 15-20 min on medium heat.

7. Add chopped tomatoes and again cook for 5-10 minute.

Note: This recipe is one of my favorite. Roasting red chilli powder and coriander powder gives blakish color to the recipe.


Other method:

1. Clean the chicken pieces and add turmeric, salt and lemon juice. Set aside.

2. Heat 1 tsp oil in a pan add chopped tomato and cook till tender. Let it cool.

3. Take the roasted red chilli powder, coriander powder, turmeric powder, cooked tomato, crushed peppercorn, clove and cinnamon powder, minced ginger and garlic in a blender. Add little water and blend till smooth paste.[Masala]

4. Heat 2 tsp oil in a pan, add 2 cloves and a small piece cinnamon. Add chopped green chillies, garlic and curry leaves. Fry them. Add onion and fry till transparent. Add marinated chicken and cook for 2-3 mins. Add ground paste [Masala], mix well. Add 1 cup water and lemon juice. Cook till all the water evaporates and gets dry. Switch off the stove.
