Sweet Pongal


Ingredients:

Rice (sona masoori) 1 cup
Moong dal/hesaru bele 1 cup
Jaggery 3 cups
Milk 2 cups
Water 2 cups
Raisins 3 tsp
Cashew 3 tsp
Ghee 3-4 tsp
Cardamom powder ¼ tsp
Nutmeg powder ¼ tsp

Method:

1. Soak moong dal in water for 30 minutes.

2. Wash and pressure cook rice and moong dal with 2 cups milk
and 1 cup water.

3. Heat ghee and roast cashews and raisins set aside.

4. Melt the jaggery in remaining water. Strain it.

5. Pour jaggery syrup into a thick bottom vessel/pan.
Cook for few minutes till it
becomes slightly thick.

6. Now add cooked rice and moog dal. Mix well, add nutmeg
powder, cardamom powder,
raisins and cashews.

7. Cook for another few minutes in medium heat till it becomes thick.
Stir in
between. Switch off the stove. It becomes thicker after cooling.
