Ingredients:
Chicken 1 kg
Grated coconut 1 cup
Onion (finely chopped) 1 large size
Coriander seeds 2-3 tsp
Dry red chillies 8-10
Peppercorns 2 tsp
Cumin seeds ½ tsp
Fenugreek seeds ¼ tsp
Garlic cloves 10
Anistar 1
Curry leaves 1 strand
Turmeric powder ¼ tsp
Salt
Oil
Method:
1. Wash and clean the chicken.
2. Heat oil in a wide pan, add anistar and chopped onions fry them till soft. Add washed chicken. Add turmeric powder and salt mix well. Cover the lid and let it cook.
3. Dry roast peppercorns, coriander seeds, cumin seeds, dry red chillies, fenugreek seeds and grated coconut separately.
4. Grind the roasted peppercorns, coriander seeds, cumin seeds and dry red chillies and fenugreek seeds without adding water and then add garlic, grind and finally add coconut and grind without adding water. [MASALA]
5. Heat oil in a frying pan add chopped garlic fry, add curry leaves and some chopped onions fry till soft. Now add ground MASALA into it. Mix well and cook for 2 mins in low heat.
6. Add this to the cooked chicken (step 2), mix well cover the lid and cook for another 10-15 mins in low heat.
7. Chicken sukka is ready to serve. It goes well with roti, rice, dosa etc.
