Poori - Saagu



POORI

Ingredients:

Wheat flour 1 ½ cups
Warm water ½ cup
Salt(optional)
Oil

Method:

1. Mix wheat flour, salt and 4-5 tsp oil in a large bowl.

2. Add warm water little by little to form smooth dough. Knead well and make a single mass.

3. Cover it or place it in a container to rest for at least about half or one hour.

4. Heat oil for frying the puris in medium heat.

5. Make small balls from the dough.

6. Take 2 polythene sheets and apply oil on one side of each. Keep the balls in between the sheets and press it, roll it with rolling pin to form a round discs, which are thicker and smaller than chapattis.

7. Fry the puris in hot oil. When the puri starts floating, smoothly press it with frying spoon. Cook it for few seconds.

8. Turn the puri and cook the other side. Remove it from the oil and place it on paper towel.

9. Serve hot with Saagu or Chicken curry

SAAGU

Ingredients:

Carrot ½ cup
Green beans ½ cup
Potato ½ cup
Green peas ½ cup
Capsicum ½ cup
Grated coconut ½ cup
Green chillies 3-5
Putani/hurigadale 2 tsp
Soaked rice 2 tsp
Cumin seeds 1 tsp
Cinnamon 1” stick
Cloves 2
Soaked Poppy seeds 2 tsp
Pepper corns ½ tsp
Chopped Mint ¼ cup
Curry leaf 1 strand
Mustard
Salt
Oil
(Any vegetables can be added)

Method:

1. Cut the vegetables into small pieces. Cook carrot, beans, green peas, capsicum, potato etc in cooker with little salt.

2. Grind grated coconut, green chillies, rice, putani, cumin, cinnamon, clove, poppy seeds, pepper, coriander-mint-curry leaves into fine paste.

3. Heat oil in a pan, add mustard when it splutters add cumin, red chillies, curry leaves one by one. Fry them.

4. Add cooked vegetables and ground paste. Mix well. Add water and salt. Cook for 5-10 minutes.
