Mixed Vegetable Sambar


Ingredients:

Vegetables ¼ cup each – Potato, Beans, Carrot, Brinjal, Tindora, Malabar Spinach. (You can also add drumstick, cucumber, ash gourd, green peas etc)
Toor dal ¼ cup
Tomato medium size 1
Onion medium size 1
Garlic cloves 3-4
Grated Coconut ½ cup
Curry leaves 2 strings
Green chillies 3
Tamarind grape size
Mustard ¼ tsp
Cumin seeds ¼ tsp
Peppercorns 3-4
Chana dal ¼ tsp
Urad dal ¼ tsp
Fenugreek seeds ¼ tsp
Red chilli powder ½ - 1 tsp
Corinader powder 1 tsp
Turmeric powder ¼ tsp
Asafoetida pinch
Oil
Salt

Method:

1. Soak toor dal for 2-3 hrs in water.Wash and pressure cook with little water till 5-6 whistles.

2. Pressure cook all the cut vegetables with little water and salt.

3. Heat oil in a frying pan, add chana dal, urad dal, pepper corns, fenugreek seeds and cumin seeds one after the other and fry. Add Green chillies fry them. Add curry leaves,chopped garlic and chopped onion fry them till onions are transparent. Add tamarind, red chilli powder, coriander powder and turmeric powder. Finally add grated coconut, sauté for few minutes and switch off the stove. Let it cool. (Masala)

4. After cooling take the fried ingredients (masala) in a blender, add some water and blend into smooth paste.

5. Heat oil in a thick bottomed pan, add mustard, curry leaves and asafoetida. Now add the masala, little salt and about ½ cup of water. Let it boil. Once it starts boiling add chopped tomato, cooked vegetables and cooked toor dal. Mix well and cook for another 10 minutes in low to medium heat.

6. Mixed Veg Sambar is ready to serve. It goes well with rice and idli even with dosa.
